摘 要:水仙茶饼属于乌龙茶类中的紧压茶,是漳平县最富特色,具有比较优势的农产品。该产品别具一格,加工工艺独特,香高味厚形方正,产业化前景看好。根据水仙茶饼品质特征要求及其加工工艺流程,针对福建水仙梗梢壮、节间长、叶张大而厚、色浓绿、含水量高却不易失水,表皮层较薄又易损伤红变、不耐摇的品种特性,系统地总结了水仙茶饼的采制技术,归纳提炼了水仙茶饼加工过程中各工序的技术参数、操作要领及注意事项,为水仙茶饼优质加工提供技术参考;并结合漳平茶业发展现状,提出了技术创新要点及发展建议。As a kind of compressed Oolong tea, Shuixian brick tea is the most characteristic agriculture product with comparative advantages. With unique processing technology, special fagrance, taste and shape, it has a good industrialization prospect. It has strong stems, long internodes, large thick dark green leaves, and high water content, but is difficult to dehydrate. Its leaves are with thin epidermal layers and are easy to be damaged and turn red. It is also not resistant to leaf rotation. With the above mentioned features, according to the quality requirement and processing technology, this paper systematically summarizes the harvesting and processing techniques.Parameters, key points in operation and precations during the processing are also concluded to provide reference for high-quality processing technology. Furthermore, combined with current development of Zhangping tea industry, it presents key points of technique innovation and suggestion for future development.
