摘　　要：冷鲜肉作为新型肉类品种,具有安全卫生、肉嫩味美、便于切割等优点,展示出良好的市场前景。从加工、运输、保鲜与肉制品的开发等方面综述国内外在冷鲜肉的研究现状以及存在的问题,并展望在今后肉制品加工方面的方向。As a new breed of chilled meat with health and safety,tender and delicious,easy to cut,etc.,have demonstrated good market prospects. This paper review the research status of chiued meat and problems from processing, transportation,preservation and meat products at home and abroad,and in the end prospects in the future direction of the meat processing area.
