摘  要:以板栗雄花序中黄酮类化合物为研究对象,采用紫外分光光度法研究理化因素对板栗花雄花序黄酮提取物清除羟自由基能力的影响。结果表明,自然光对板栗花雄花序黄酮提取物清除羟自由基(·OH)的能力有影响;温度对清除率影响不显著;在p H>5的环境中羟自由基清除效果较好;金属离子Na+、Mg2+、Fe3+对其清除羟自由基能力的影响不显著,而K+、Ca2+及过量的Al3+影响显著。The influence of physical and chemical factors to flavonoid extracted from the male chestnut flowers' scavenging ability of Hydroxyl free radical was studied by ultraviolet spectrophotometry.The results showed that the natural light had influence on flavonoid extracted from the male chestnut flowers' scavenging ability to hydroxyl free radical.The effect of temperature was not obvious.The scavenging ability of hydroxyl free radical was superior in the acidic condition of pH5.The effect of metal ions,Na^+,Mg^2+,Fe^3+ on scavenging ability of hydroxyl free radical was not obvious.But the effect of K^+,Ca^2+ and excess Al^3+ was obvious.
