摘　　要：本文综述二氧化硫类葡萄保鲜剂的特性、使用原理及保鲜葡萄的应用情况,重点阐述亚硫酸盐葡萄保鲜剂的种类、特点、性能、作用原理、适用范围及应用技术,并根据目前实际应用状况,提出亚硫酸盐葡萄保鲜剂的应用配套技术措施及加快研发非二氧化硫类葡萄保鲜剂的建议。This paper reviewed the characteristic, principle and application situation of sulfur dioxide grape preservative, and mainly discussed the types, characteristics, performance, function principle, application scope and application technology of sulfite grape preservative. And according to the actual application situation, the supporting technologies of application of sulfite grape preservative were proposed, and the development of non sulfur dioxide grape preservative should be speeded up.
