摘  要:目的查明某次食物中毒事件的发生原因和可疑危险因素来源,提出有针对性的控制措施和建议,预防此类事件的再次发生。方法通过现场流行病学和试验室检测分析事件原因和致病因子,并采用脉冲场凝胶电泳(PFGE)进行同源性分析。结果共搜集到疑似病例61例,其中可能病例20例,确诊病例5例。病例主要以腹泻、腹痛、恶心、呕吐为主,部分患者伴有乏力、发热、头痛、头晕等症状。5份病例样本、3份厨师、1份生扇贝以及2份养殖水检测为副溶血性弧菌阳性,10份样本脉冲场凝胶电泳检测结果同源性为100.0%,另外1株病例样本与其他10株的同源性为60.0%。结论食用被副溶血性弧菌污染的水产品是导致本次食物中毒的主要原因,建议提高餐饮机构自我管理能力,增强责任意识,防止类似事件再次发生。Objective The aim of this study was to find out the reason for a case of food poisoning and the sources of suspicious risk factors, in order to put forward the measures to avoid such incident from happening again. Methods The causes and pathogenesis were analyzed by field epidemiology and laboratory testing. And pulsed field gel electrophoresis(PFGE) was used to evaluate the strain homology. Results Sixty-one cases were investigated, including 20 possible cases and five confirmed cases. The main symptoms were diarrhea, abdominal pain, nausea, and vomiting. For some patients, the symptoms were accompanied with fatigue,fever, headache, dizziness and other symptoms. Samples from five patients, three chiefs, one scallop and two copies of aquaculture water for seafood were tested positive for vibro parahaemolyticus. Ten out of 11 cases were 100% homological, and the one left was60% homological to the others. Conclusion The main cause of food poisoning was due to aquatic products contamination by vibro parahaemolyticus. It is very necessary to improve the ability of self-management of restaurants, strengthen the food safety responsibility and consciousness to prevent such cases.
