摘 要:目的了解厦门市居民膳食中铅、镉、汞摄入量,评估厦门市居民膳食铅、镉、汞的安全性。方法对厦门市市售食品中铅、镉、总汞含量进行监测,结合居民膳食摄入量调查结果,对居民膳食中铅、镉、汞暴露水平进行评估。结果厦门市居民平均膳食中铅(每周)、镉(每月)和总汞(每周)暴露量分别为10.0、27.6和0.9μg/(kg·bw),占(原)PTWI/PTMI的40.0%、110.6%和22.5%;平均膳食铅暴露的暴露边界比(MOE)为0.86。结论目前厦门市居民膳食中铅和汞的摄入量是安全的,但镉的膳食暴露量问题较严重,应该加强相关产品中镉的监测及膳食指导工作。Objective To obtain the basic data of heavy metals intake from food for Xiamen residents, and to assess the health risk of heavy metals in dietary. Methods We conducted a surveillance on the contents of lead, cadmium and mercury in food and a survey on dietary intake. Results The average exposed levels of dietary lead (per week), cadmium (per month) and mercury (per week) of Xiamen residents were 10.0, 27.6 and 0.9 μ g· (kg·bw)^-1, respectively, and accounted for 40.0%, 110.6% and 22.5% of provisional tolerable weekly/month intake (PTWI/PTMI). And the MOE value of lead was 0.86. Conclusion The evidence shows that the levels of the dietary intake of lead and mercury are safe for Xiamen residents at present. However, the problem of dietary intake of cadmium is very serious. It is essential to both strengthen the cadmium surveillance in related food and provide dietary intake guides for consumers.
