摘  要:从微生物的角度对6个生产厂家25批次保健食品和2批原料的质量进行评价,发现样品和方法可能存在的问题。根据国家标准GB 4789.35-2010进行乳酸菌计数,同时采用生化鉴定、16S r RNA序列分析、杜邦鉴定系统等多种手段对分离纯化的菌株进行鉴定和同源性分析。结果表明:3%的保健食品不符合规定,另有一批原料菌种与标准规定的不一致,不同厂家的动物双歧杆菌和鼠李糖乳杆菌的相似性达到95%以上,可能来自同一个供应商或标准菌株。企业应从菌株的形态特征、生化特征、同源性等多方面对菌种进行持续性监控。To evaluate the quality of 26 batches health food and 2 batches raw materials of the 6 manufacturers from the microbiological point of view, found potential problems of the sample and the method. Lactic acid bacteria counts is carrying out according to national standard GB 4789.35-2010, and identification and homology analysis of isolated and purified strains is studied by using biochemical identification, 16S rRNA sequence analysis and RiboPrinter identification system. Results: 3% of health care food did not comply with the provisions, , strain of another group of material was not inconsistent with standard, the similarity of Bifidobacterium animal and Lactobacillus rhamnosus from different manufacturers reached more than 95%, and they might be from the same vendor or standard strains. The morphological characteristics, bio- chemical characteristics and homology of strains should be monitored continuously.
