摘　　要：本土作家袁林说，西安的饮食受到两种因素的影响，第一是中国儒家天人合一的哲学思想，五味杂陈；第二源自本地历史地理环境的制约，深沉厚重。在西安的饮食中，酸咸麻辣均有，但是并不特别突出任何一种味道，西安的饮食风格，最接近中国的传统文化，中庸、融和、不偏不倚。Local author Yuan Lin contends that the cuisine of Xi＇an is runderpinned by two factors. The first is the Confucian idea of ＂Harmony between Man and Nature＂, which stresses the integration of diverse flavors. The second is the historical and geographic context, characterized by profundity and solemnity.
