摘  要:目的了解桂林市市售食品中食源性致病菌的污染状况,确定高危食品的种类,为食源性疾病的监测提供科学依据。方法采用随机抽样的方法,从2007年到2012年每年抽取桂林市市区3家菜市场、5家大型超市及1家奶牛场的生肉类、非包装熟肉制品、乳及乳制品、生食蔬菜、水产品、冷冻饮品、熟制粮谷类制品等七类食品共831份,依据GB4789-2010中的方法检测沙门氏菌、单增李斯特菌、金黄色葡萄球菌,依据GB4789-2008中的方法检测大肠杆菌O157:H7、副溶血性弧菌。结果在831份受检样品中,76份检出致病菌,总检出率为9.1%;其中,检出沙门菌39份,检出率为4.7%,检出单增李斯特菌12份,检出率为1.4%,金黄色葡萄球菌检出11份(5.4%),副溶血性弧菌检出14份(9.5%),大肠杆菌O157:H7未检出;2007~2012年桂林市食源性致病菌阳性检出率呈逐年下降趋势。结论桂林市市售食品虽然致病菌阳性检出率逐年降低,但仍存在一定程度的致病菌污染,应加强食品卫生管理,防止食源性疾病的发生。Objective To study polluting condition of food-borne pathogens in market-sold and find out kinds of high-risk food in Guilin city,so as to provide scientific basis for surveillance of food-borne diseases. Methods According to random sampling, 831 food samples from seven kinds of food (raw meats, unwrapped cooked meats, milk and milk products, raw vege- tables, aquatic products, frozen drinks and cereal grains products)were collected from 3 food markets,5 big supermarkets and 1 cattle farm of Guilin city from 2007 to 2012.Then, salmonella, Listeria monocytogenes and staphylococcus aureus were tested according to methods in GB4789-2010.Meanwhile,Escherichia coli O157 :H7 and vibrio parahaemolyticus in all samples were monitored and analyzed according to testing methods in GB4789-2008.Results Among all the samples, pathogenic bacteri- um were found in 76 samples in the detection, and total detection rate was 9.1%.And among them, salmonella was found in 39 samples, the detection rate was 4.7% ;Listeria monocytogenes was found in 12 samples, the detection rate was 1.4% ; Staphylo- coccus aureus was found in 11 samples, and the detection rate was 5.4% ; vibrio parahaemolyticus was found in 14 samples, and the detection rate was 9.5%.No Escherichia coli O157:H7 was found in the detection.Positive detection rate of food-borne pathogenic bacteria in Guilin city from 2007 to 2012 appeared a decrease trend year by year.Conclusion Although detection rates for food-borne pathogens decrease year by year in Guilin city, there exists a certain degree of food-borne pathogens con- tamination.Thus, it is important to strengthen the management of food hygiene, so as to prevent the food-born diseases.
