摘　　要：为深入开发东方巨齿蛉这一珍贵的药食两用资源,对东方巨齿蛉幼虫的营养成分进行了测定。结果表明:东方巨齿蛉幼虫营养成分丰富且含量高,其中蛋白质含量高达75.5%,总糖为0.368%,胆固醇为165.6mg/100g,脂肪为13.5%;含有17种氨基酸,总氨基酸含量为58.93g/100g,其中8种必需氨基酸占总氨基酸的41.2%,必需氨基酸与非必需氨基酸之比为70.1%,符合FAO/WHO推荐的理想蛋白模式;脂肪酸以软脂酸、油酸和棕榈油酸为主;矿质元素丰富且含量高,维生素B2含量达3.46mg/100g。东方巨齿蛉具有较高的营养价值和保健功能,可深入开发为药食两用食品。The nutritional components of A.orientalis larvae were determined to further develop A.orientalis,a rare medicinal and edible resource.The nutritional components of A.orientalis larvae are abundance and higher content.The content of protein, total sugar, cholesterol and fat is 75.5%, 0.368%,165.6mg/100g and 13.5% separately.The content of total amino acids including 17 amino acids is 58.93 g/100g and the content of 8 essential amino acids accounts for 41.2% of total amino acid.The ratio of essential amino acid/non-essential amino acid is 70.1%,which meets the ideal protein model recommended by FAO/WHO.The fatty acid is composed of palmitic acid,oleic acid and palmitoleic acid mainly.The content of different mineral elements is high and vitamin B2 content is up to 3.46 mg/100g. A.orientalis with high nutritional value and health function should be developed as a medicinal and edible food.
