摘 要:利用电子鼻对不同贮藏/货架期内的甜柿挥发性成分进行判别分析。采用主成分分析(PCA)、线性判别分析(LDA)模式判别方法进行数据分析,通过负荷加载(Loadings)分析研究主要传感器响应值的变化。结果表明,LDA方法有效区分常温和贮后不同货架期的甜柿,对低温贮藏期间的甜柿区分效果稍差。传感器W2S(乙醇类)、W1W(萜烯类)在甜柿常温货架期和低温贮藏期判别中起主要作用,而传感器W2W(芳香成分和有机硫化物)、W1W(萜烯类)在甜柿贮后货架期的判别中起主要作用。An electronic nose was used to characterize and classify different volatile components ofsweet persimmon according to times of storage. Principal component analysis(PCA) and lineardiscrimination analysis(LDA) were respectively used for data process, and the response changes of theprimary sensor were mainly analyzed by loadings analysis. LDA results indicated that sweetpersimmon stored under different conditions, i.e, room temperature storage(18~20 ℃) and storageafter postharvest(18~20 ℃ after stored under 0±1 ℃ for 40 d), was discriminated more effectivelythan those under cold storage(0±1 ℃). Sensors of W2S(ethanol) and W1W(terpene) played importantroles in discrimination of sweet persimmon with different shelf life under either room temperature orcold storage, while sensors of W2W(aroma constituent and organic sulfide) and W1W(terpene)contributed for discrimination of those stored after postharvest. Therefore, electronic nose is anefficient device for rapid discrimination of sweet persimmon stored under different conditions.
