摘　　要：烤肉装置是一种烧烤食品的机械化设备,其主要功能是制作各种烧烤制品。介绍了烤肉装置的研究现状,对比不同类型烤肉装置的特点,分析了不同类型的装置存在的问题。提出要使装置方便、节能、环保为一体,将烤肉工艺与烤肉装置结合起来,提高烤肉设备的智能化和自动化。在设计新型烤肉装备时要避免在烤制过程中造成环境污染及产生有害物质,要解决卫生条件差、自动化程度低的问题,这为烤肉装置的设备研究和设计提供了有利的参考依据。Barbecue machine is a kind of barbecue food mechanized equipment, its main function is to make all kinds of barbecue products. The current research situation of barbecue device was introduced, characteristics of different types of barbecue device were compared and exist- ing problems were analyzed. To make the device that is easy to make, energy saving, environmental protection as a whole, combined barbecue craft with barbecue device to promote the intelligent and automation. When designing the new barbecue equipment, it must to avoid environ- mental pollution in the process of baking and produce the harmful substances, to solve the problem of poor health condition, low degree of au- tomation in the baking procevs, which provide a favorable reference for the study and design of equipment barbecue device.
