摘 要:目的了解疗养院部分冷食细菌污染状况与餐具消毒效果,为加强有效监管提供参考。方法采用现场抽样检测方法,对某部14个疗养院餐厅的餐具及凉菜进行调查。结果共采集疗养院餐厅凉菜间自制凉菜33份大肠菌群检出率为42.42%,主要是细菌总数超标和检出大肠菌群。共抽检餐具79件,餐具消毒合格率为96.20%。结论该部疗养院餐厅餐具消毒效果较好,但凉菜间自制冷食质量存在安全隐患,应加强监管力度。Objective To understand the bacterial contamination of some cold dishes and disinfection effect of tableware in military sanatorium, and to provide references for health supervising departments. Methods Field sampling detection meth- od was used to monitor the disinfection quality of mess kit and hygiene status of self - prepared cold dishes. Results The dectecting rate of E. coli inspected on 33 cold dishes was 42.42%, which contained over- standard of the aerobic count and detection of coli forms. 79 tableware samples were tested, the eligible rates of disinfection effect were 96. 20%. Conclusion The disinfection quality of cooking utensils in 14 restaurants of sanatorium is good, but the supervision of cold dish pre- paring room should be reinforced.
