摘  要:通过电感耦合等离子质谱法(ICP-MS)对南极磷虾及其制品中21种化学元素进行分析,结果表明南极磷虾及其制品中有丰富的常量元素和微量元素,其中Na,Mg,K,Cu,Ni,Zn在南极磷虾中的分布无明显差异,Ca,Fe,Mn,Mo,Co,V在虾肉比虾头和虾皮相比含量较低,南极磷虾富含Se且在虾肉中含量较高;虾粉中Ca,Fe和V含量较高,虾油相对南极磷虾则富含Fe,Cu,Ni;南极磷虾及其制品中重金属以及除As外的卫生限量元素含量都较低,而总As含量超出卫生限量中无机砷的限量值。The content of 21 elements in Antarctic krill and its production has been determined using inductively coupled plasma-mass spectrometry (ICP-MS) after microwave digestion. This work presentsthat Antarctic krill and its products are rich in major elements and trace elements. The distribution in Antarctic krill of Na, Mg, K, Cu, Ni and Zn as no obvious difference, the content of Ca, Fe, Mn, Mo, Co, V in the shrimp is lower than head and shell, however, shrimp is richer of Sc; the content of Ca, Fe and V is higher in shrimp powder and shrimp sauce is relatively rich in Fe, Cu, Ni; the content of heavy metals except of As is low, but the content of total As is beyond the limited value of the inorganic arsenic in health limited.
