摘 要:基于静态顶空(HS)结合气相色谱-质谱(GC-MS)联用分析技术建立了一种快速定量分析白酒酒醅中乙醇含量的方法。通过优化确定了该方法最佳分析条件为:酒醅样品2 g,于20 m L顶空瓶中,加水4 m L进行振荡浸提,45℃恒温孵育2 min,后经顶空大体积进样,于气相色谱-质谱联用仪分析。结果表明,该方法检出限低于0.0016 m L/100 g,RSD〈10%,回收率为93.73%~95.51%。该方法与传统的蒸馏法相比具有快速、简便、灵敏度高的优点,为白酒酒醅中乙醇含量的测定提供了一条新的途径。A rapid quantitative analysis method of ethanol content in fermented grains had been developed using HS-GC-MS. The technical parameters of such method were optimized as follows: 2 g fermented grains sample diluted with 4 mL water in 20 mL headspace vial, then vortexed for 1 min, after 2 minutes incubation at 45 ℃, the upper gas was analyzed by GC-MS. The detection limit of such method was below 0.0016 mL/100 g, RSD was within 10 %, and the ethanol recoveries was 93.73 %-95.51%. Compared with traditional distillation method, this method had the advantages such as rapid determination, simple operation, and high sensitivity. It was a new approach to determine ethanol content in fermented grains.
