摘 要:在食用油脂加工工业中,油脂的过度精炼不仅能耗高、产生的污染大,而且去除了较多的油脂中的微量活性物质,增加了油脂中反式脂肪酸的含量,降低了油脂的营养价值,是目前油脂加工工业中普遍存在问题。而当今节能减排、保护环境越来越受到社会重视,同时,随着消费者生活水平的改善,人们对食用油脂品质的要求不断提高,因此,对食用油脂适度精炼进行研究,以获得微量营养物质保留较多、安全可靠、加工能耗和污染较低的油脂产品,是油脂产业可持续发展的必由之路。超声波辅助加工是一种绿色环保的物理处理方式,概述了超声波的特性和工作原理,并针对超声波在毛油的预处理、油脂的脱胶、脱酸、脱色和深加工等方面的应用现状进行了较全面的综述。最后,还分析了超声波对食用油品质的影响,阐述了超声波技术在油脂精炼中的优势和有待改进的地方,以展望超声波技术在油脂适度精炼工艺中应用前景。In oil refining processing industries, the over refinement of oil not only required too much energy, but also produced a lot of pollutants, meanwhile, the micro active substances in the oil were removed on a large scale, the content of trans-fatty acid was also raised up, so the nutritional value of the over refinement oil decreased too much, this common problem was so outstanding that many oil processing factories have to face with in nowadays. However, more and more importance was attached to the energyconservation, emissionreduction and environment protection, and with the development of the consumers' life, the high quality edible oil were largely demanded, therefore, it was necessary to do research on the oil moderately refining process in order to produce more nutritious, more safe, more reliable edible oil for the consumers, and to develop a lower energy consumption and lower pollution technology for the oil processing factories. Ultrasonic assisted processing was an eco-friendly physical approach, in this paper, the characteristics and operating principles of ultrasonic were introduced. In view of crude oil pretreatment, oil degumming, oil deacidification, oil decolorization and oil deep processing, the application status of ultrasonic was summarized comprehensively. At last, the influence of oil quality during the ultrasonic assisted processing was analyzed. At the same time, the advantages and disadvantages about the application of ultrasonic in oil refining process were also concluded so as to look forward to the prospects of ultrasonic in oil moderately refining process.
