摘  要:采集白燕窝、掺假白燕窝和常见掺假物质样品,应用L-8900型全自动氨基酸分析仪进行检测,比较分析样品的氨基酸组成特点,以17种氨基酸含量为指标构建不同类型样品的指纹图谱数据库;同时,利用SAS统计分析系统软件对各类样品的氨基酸组成进行聚类分析。结果显示,白燕窝的氨基酸指纹图谱与掺假物质具有显著性差异,与掺假白燕窝比较,局部峰面积比例不一;分析其必需氨基酸和非必需氨基酸的含量排序,各必需氨基酸含和非必需氨基酸的含量排列一致,掺假白燕窝不符合白燕窝的排序特征;白燕窝中必需氨基酸与总氨基酸比值(EAA/TAA)和必需氨基酸与非必需氨基酸比值(EAA/NEAA)与掺假白燕窝、掺假物质有差异,可以作为白燕窝识别的特征性指标;将13个样品进行聚类分析,符合样品分类情况,说明氨基酸指纹图谱指纹谱图鉴别法是一种有效且可靠性高的鉴别白燕窝的方法。The amino acid composition of edible bird's nest (EBN), adulterate EBN and common adttltemnts were analyzed by using an automatic amino acid analyzer (L-8900 model). To establish a characteristic fingerprint data and develop a cluster analysis (Flexible-Beta method) on the basis of 17 determined amino acids. The results were as followed. The fingerprint of EBN showed difference from other types in peak area. The content of EBN essential amino acids (EAA) from highest to lowest was consistent, while adulterate EBNs didn't conform to the regulations. The EAA/TAA and EAA/NEAA of EBN were significant difference from adulterate EBNs, which can use to be the characteristic indexes. The outcome of cluster analysis showed that EBNs, adulterate EBNs and common adulterants can be well classified. Therefore, the amino acids composition fingerprint could be used to distinguish adulterate bird's nest based on changes in content or proportion.
