摘 要:本研究采用传统纯培养方法对采集自内蒙古鄂尔多斯地区的21份羊乳制品(4份鲜绵羊奶,10份酸绵羊奶以及7份酸山羊奶)中的乳酸菌进行分离鉴定。应用MRS和M17培养基从样品中分离到68株乳酸菌,然后应用16S r RNA基因序列分析和系统进化关系研究将68株乳酸菌鉴定为4株Enterococcus durans,5株Enterococcus faecalis,12株Lactococcus lactis subsp.lactis,8株Leuconostoc mesenteroides,3株Leuconostoc pseudomesenteroides,31株Lactobacillus helveticus,5株Lactobacillus plantarum。其中,绵羊鲜奶中L.lactis subsp.lactis为优势菌种,占绵羊鲜奶总分离株的38.46%;L.helveticus为内蒙古鄂尔多斯地区酸羊乳制品中乳酸菌的优势种,占总分离株的45.59%。In this study, Lactic acid bacteria (LAB) were isolated and identified by traditional pure culture method from 21 samples of Ewe's milk and yoghurt (including 4 samples of fresh sheep milk, 10 samples of fermented sheep milk, and 7 samples of fermented goat milk) collect- ed from Ordos of Inner Mongolia. Sixty-eight strains of Lactic acid bacteria were isolated, and then identified by 16S rDNA sequencing and phylogenetic analysis. These isolates were identified as Enterococcus durans (4 strains), Enterococcusfaecium (5 strains), Lactococcus lactis subsp, lactis (12 strains), Leuconostoc mesenteroides (8 strains), Leuconostoc pseudomesenteroides (3 strains), Lactobacillus helveticus (31 strains), Lactobacillus plantarum (5 strains). Lactococcus lactis subsp, lactis is the dominant species, held 38.46% of the total isolated LAB, while L. helveticus occupied 45.59 % of the total LAB isolates as the dominant species of fresh ewe's milk in Ordos of Inner Mongolia.
