摘 要:以白酒酒糟为原料,通过纤维素酶筛选培养基筛选出酒糟中高产纤维素酶菌株。筛选得到3株产纤维素酶菌株:p1001、p1002、p1004,经鉴定这3株菌分别为解淀粉芽孢杆菌(Bacillus amyloliquefaciens),枯草芽孢杆菌(Bacillus subtilis),甲基营养型芽孢杆菌(Bacillus methylotrophicus)。通过研究生长条件对其酶活性的影响,结果显示,这3株菌在55℃、p H值为5时酶活性最高,在此条件下p1004的酶活力为1.2 U/m L,约为p1001、p1002的两倍。这对于白酒酿造过程中最大限度利用产纤维素酶菌来提高纤维素的分解和出酒率具有重要的实际应用价值。Using distiller's grains as raw material, cellulose-producing strains were screened by cellulase screening medium. The results showed that three cellulose-producing strains were screened, namely p1001, p1002 and p1004, respectively. And the three strains were identified as Bacillus amyloliquefaciens, Bacillus subtilis and Bacillus methylotrophicus, respectively. Through the study of effect of strain growth conditions on enzyme properties, the results showed that the strains had the optimal cellulose-producing activity in 55 ℃, pH 5. Under above conditions, the enzymatic activity of p1004 was 1.2 U/ml, nearly twice as much as p1001 and p1002. The research made the best use of cellulase-producing strains in liquor-making process, and the results had important application value to improve the decomposition of cellulose and liquor yield.
