摘　　要：食品添加剂是食品工业的一个重要组成部分,所有的食品都会用到食品添加剂。但是,食品添加剂的错误使用会对人们健康造成威胁,必须对其使用进行有效的控制。本文基于肉制品中食品添加剂对人体健康的影响,通过层次分析法确定各种食品添加剂所占的权重,综合考虑各种指标绘制总体质量控制图,以实现对加工过程的质量监控。Food additive is an important part of food industries since almost all processing food use food additives. But the wrong usage of food additives may cause problems to people＇ s health, therefore, food additives must be used under the effective control. This article, based on the effect of food additives in meat products on human health, Analytic Hierarchy Process （AHP） was used to determine the weights of different kinds of food additives, a quality control map after considering various indexes was draw to monitor the quality in food process.
