摘  要:试验以牛骨为主要原料,研制牛骨蛋白多肽粉。通过对喷雾干燥前牛骨酶解液的抗氧化活性测定,喷雾干燥时进料速度、进风温度测定,喷雾干燥后牛骨多肽粉水分含量测定、水分活度测定、溶解度的测定和颗粒分布测定,以及牛骨多肽粉微观结构观察,确定喷雾干燥对牛骨蛋白多肽粉理化性质及微观结构的影响。结果表明,喷雾干燥前牛骨酶解液多肽液的总抗氧化能力为谷胱甘肽总抗氧化能力的89.36%,喷雾干燥进风温度为150℃,进料速度为50 r/min,牛骨多肽粉成品中总粗蛋白为39.50%,小分子蛋白为14.22%,氨基酸为4.42%,肽化率为≤68.92%,水分含量为2.72%±0.13%,水分活度为0.315±0.19,溶解度为76.25%±0.15%,最终得到牛骨蛋白多肽粉黄白色粉末产品。As a kind of raw material, the bovine bones were applied, researching the powder of bone protein polypeptide. By measuring the antioxidant activity of the antioxidant activity solution before the spray drying, the feed speed and the Inlet air temperature when the spray drying, as well as the powder of bone protein polypeptide's moisture content, water activity, solubility, granulometric distribution after the spray drying, and microstructure observation of polypeptides powder, determining the spray drying in the effect of the powder of bone protein peptide physical and chemical properties and microstructure. The main findings are as follows: The total antioxidant capacity of bone hydrolyzate peptide solution before spry drying had 89.36% of the total antioxidant capacity of glutathione, the inlet temperature of spray drying was 150 ℃, the feeding rate of 50 r/min, the polypeptides finished products of the total crude protein powder was 39.50%, small molecule protein was 14.22%, amino acids was 4.42%, conversion rate of peptide was ≤ 68.92%, a water content of 2.72%±0.13%, a water activity of 0.315±0.19, the solubility was 76.25%±0.15%, the finally obtained powder of bone protein polypeptide is yellowish white powder products.
