摘 要:本研究以新鲜秋刀鱼为原料,用超临界CO2萃取法萃取鱼油,探讨最佳萃取条件;用紫外分光光度法测定秋刀鱼鱼油的主要活性成分;并以明胶和海藻酸钠配制成较浓胶体溶液后混合作为壁材、以鱼油为芯材、氯化钙溶液为定型液,用喷雾定型固化法制备固体鱼油微粒.结果表明:超临界CO2萃取法萃取秋刀鱼鱼油的最佳工艺条件为:萃取温度45℃、萃取时间2.5 h、萃取压力27 MPa.此条件下鱼油得率1.43%,所得鱼油中EPA占43.5%,DHA占30.1%.用喷雾定型固化法制备的固体鱼油微粒中DHA+EPA的含量可达42mg/g.Using fresh saury as raw material,the current research focuses on exploring the optimal extraction conditions with supercritical CO2 extraction. UV spectrophotometry is used to determine the main active ingredient of sauryfish oil. Furthermore,the capsule's wall material is mixed with concentrated colloidal solution of Gelatin and sodium alginate,and saury fish oil is used as core material. What is more,with the liquidcalcium chloridesolution asstereotypes,the solid particles fish oil is prepared by spray stereotypes solidification. The result shows that the optimal supercritical CO2 extraction conditions are as follows: temperature: 45℃; time: 2. 5h; pressure:27Mpa. Under the above condition,the rate of fish oil is 1. 43%. The fish oil contains 43. 5% EPA and 30. 1%DHA. By applying spray stereotypes solidification,the content of EPA and DHA in the solid particles fish oil is42 mg / g.
