摘 要:以稻谷品种"准两优"和"中加早"为试验材料,研究水分含量为22%的稻谷籽粒分别在45、55、65℃下干燥处理0、20、40、60、80、100、120、150、180 min后含水量、裂纹率、吸光度和破碎率变化。研究结果表明:随着干燥处理时间的延长,2个稻谷品种含水量逐渐降低,去壳稻谷的裂纹率逐渐增加,其固绿染液的吸光度数值整体呈现增加趋势。随着干燥处理温度的升高,高水分稻谷达到储藏安全水分含量的时间也相对越短。在65℃下干燥处理120 min后,准两优和中加早稻谷含水量分别达12.40%、12.43%,其裂纹率也相对增加。在较高温度下干燥,随着干燥处理时间的延长,稻谷加工成糙米破碎率增加,染色籽粒的数量随之增加,破碎籽粒的染色面积扩大,品种之间无明显差异。Unhusked rice zhunliangyou and zhongjiazao with moisture content of 22% were used as experiment samples,and were dried at 45,55 and 65℃ for 0,20,40,60,80,100,120,150 and 180min.The change of their moisture content,cracking rate and OD value and breakage rate was investigated in laboratory.The results showed that the moisture content of two kinds of unhusked rice decreased with the increasing creased.The higher the drying drying time,and the cracking rate of husked rice and the OD of FCF dye intemperature ,the shorter the time reaching the safe moisture content of storage for high moisture content unhusked rice.Moisture contents of unhusked rice zhunliangyou and zhongjiazao dried at 65℃for 120min were 12.40% and 12.43% respectively,and their cracking rate also increased accordingly.With higher temperature drying, the breakage rate of brown rice processed from unhusked rice,the number of dyeing kernels and the staining area of breakage kernel increased with increasing drying time.There was no significantly different between the two varieties.
