摘 要:从全国各地民间收集的红曲米中分离筛选到1株高产红曲色素的红曲霉Mp-41菌株,依据形态和ITS序列鉴定该菌株为紫色红曲霉(Monascus purpureus)。对Mp-41菌株的固体发酵基质和发酵条件进行响应面优化。结果表明,Mp-41菌株产生红曲色素的适宜条件为:以籼米为固体发酵基质,初始含水量44.81%,初始p H 6.0,培养温度32℃,接种量为2.65 m L·30g-1,发酵时间为10.19 d。在此条件下,Mp-41菌株发酵生产红曲米色价最高,可达5 340.4 U·g-1,为市售红曲米色价的2~3倍。One Monascus strain Mp-41 with high pigment production ability was isolated from red kojic rice collected all over China. According to its morphology and ITS sequences,the strain Mp-41 was identified as Monascus purpureu. The solid fermentation conditions of Mp-41 were optimized by response surface method. It was shown that the optimal fermentation conditions were as follows: long rice as substrate,initial moisture content of 44. 81%,initial p H of 6. 0,culture temperature of 32℃,inoculation amount of 2. 65 m L·30g- 1,and fermentation time of 10. 19 d.Under this condition,the color value of red kojic rice after fermentation was the highest( 5 340. 4 U·g- 1),which was 2- 3 times as much as those sold in the market.
