定西地产“黑美人”马铃薯中花青素提取工艺研究

摘　　要：研究了定西地产"黑美人"马铃薯中花青素的提取工艺,比较不同的提取溶剂对花青素提取率的影响.结果表明,用0.5%盐酸乙醇作为提取溶剂,提取"黑美人"马铃薯中花青素的提取率最高,为3.55mg/100g鲜重.The paper first studies the extraction technology of anthocyanin from Potato Heimingrong produced in Dingxi, and then compares the effect of the different extraction solvent on the extraction rate of anthocyanin. The result indicates 0.5 hydrochloric acid ethanol produces the highest rate of extraction of anthocyanin, i.e, 3.55mg/100 g fresh weight.
