摘  要:采用多变量分析方法研究二氧化氯(Cl O2)对蓝莓低温贮藏期间和货架期期间果实品质及活性氧代谢的影响。结果表明,在1°C贮藏及货架期期间,Cl O2可显著延缓蓝莓好果率的下降,降低呼吸速率,抑制p H值、谷胱甘肽(GSH)和丙二醛(MDA)含量升高。用25μg/L Cl O2处理可有效提高蓝莓果实过氧化氢酶(CAT)和脂肪氧合酶(LOX)活性,抑制超氧化物歧化酶(SOD)活性的升高。主成分分析结果表明,在贮藏期间,蓝莓果实好果率和过氧化氢(H2O2)含量主要受75μg/L Cl O2的影响。在贮藏后期75μg/L Cl O2对蓝莓果实的MDA、蛋白质和GSH含量的影响较大。在货架期期间,25μg/LCl O2对蓝莓果实过氧化物酶(POD)、多酚氧化酶(PPO)、抗坏血酸过氧化物酶(APX)和CAT活性的影响较为显著。由偏最小二乘回归分析和通径分析可知,蓝莓果实的好果率、H2O2含量与POD、PPO呈负相关关系,与APX、CAT呈正相关关系。POD通过作用SOD间接影响蓝莓果实好果率的变化,而PPO是通过POD或LOX对好果率发挥作用。LOX、GSH和SOD是影响蓝莓果实H2O2的关键因子,MDA对H2O2含量的影响主要通过GSH来实现。The influence of chlorine dioxide on fruit quality and active oxygen metabolism of blueberry fruit were investigated using multivariate analysis. The results showed that chlorine dioxide reduced the decay index, and inhibited the increase of respiratory intensity as well as the pH, GSH and MDA of blueberry fruit during the storage at 1 ℃ and shelf life. The activities of CAT, LOX were promoted by 25 μg/L CIO2 during storage, which also could restrain the ac- tivity of SOD in fruits. The content of protein was lower than contrast test treated with 75 μg/L CIO2. Principal component analysis (PCA) showed that 75 μg/L CIO2 significantly influenced the decay index and the content of H2O2 at the storage, and affected thecontent of GSH, MDA and protein during the later period of storage. In contrast, activities of POD, PPO, APX and CAT of fruit were mainly influenced by 25 μg/L CIO2 at the later stage of storage. PLSR and path anal- ysis showed that the influence of PPO on decay indexwas impacted by activities of POD and LOX. GSH, LOX and SOD are the key factors of the evaluation of H2O2. In addition, H2O2 was mainly influenced by MDA, and the impacts of MDA on H2O2 were impacted by GSH. Meanwhile, decay rate and H2O2 of blueberry were positively correlated with APX, CAT, and POD, PPO were significantly and negatively correlated with decay rate and the content of H2O20
