摘  要:以湖南几个主栽茶树品种春、夏、秋三季鲜叶为实验材料,研究不同品种、不同嫩度及不同季节茶树鲜叶多酚氧化酶和过氧化物酶活性差异。结果表明,黄金茶2号、槠叶齐是高PPO酶活品种;尖波黄13号、潇湘红12-3、碧香早、玉笋、福鼎大白茶是高POD酶活品种;桃源大叶、白毫早、湘波绿2号、黄金茶1号是双低酶活性品种;一芽一叶原料两酶活均值高于一芽二叶;PPO酶活均值夏季>秋季>春季,POD酶活均值秋季>春季>夏季。The difference of PPO and POD activity in fresh tea leaves with various cultivars, tenderness and harvest season was studied by using fresh tea leaves in spring, summer and autunm from the main tea cultivars in Hunan Province. The results showed that the Huangjincha No.2 and Zhuyeqi were high in PPO activity, Jianbohuang No.13,Xiaoxianghong 12-3, Bixiangzao, Yusun, Fudingdabai were high in POD activity, while Taoyuandaye, Baihaozao,Xiangbolv No.2, Huangjincha No.1 were low in the two enzymatic activities. The activities of PPO and POD in one leaf with one bud were higher than those in two leaves with one bud; the activity of PPO in fresh leaves was highest in the summer, followed by autumn and spring, whereas the activity of POD was highest in the autumn, followed by spring and summer.
