摘 要:采用超声波萃取技术从干制石榴皮中提取石榴皮多酚。以羟自由基(OH·)、超氧阴离子(O2·)的清除率和油脂过氧化值为指标,研究了干制石榴皮多酚的抗氧化活性。结果表明:石榴皮多酚具有较强的自由基清除能力和一定的抗油脂氧化效果,在0.26~0.45mg/mL时,石榴皮多酚对羟基自由基(OH·)的清除效果不及Vc;但在0.46~0.60mg/mL时,石榴皮多酚则优于Vc;在相同浓度下石榴皮多酚对超氧阴离子的清除效果总是略高于Vc;抗油脂过氧化效果仅略低于BHT。The ultrasonic extraction was used to extract polyphenol from dry pomegranate peels. Taking the scavenging rate to OH- and O2-, and POV as indexes, the antioxidant activity of the dry pomegranate peel polyphenol was studied. The results showed that the pomegranate peel polyphenol had strong free radical scavenging activity and certain anti lipid oxidation effect. When the concentration of the pomegranate peel polyphenol was 0.26-0.45 mg/mL, the OH" scavenging activity was inferior to VC, but better at the concentration of 0.46-0.60 mg/mL. The 02-" scavenging activity was always higher than ~C. Anti lipid peroxidation effect was only slightly lower than BHT.
