摘 要:分析不同地域来源大米外观和有机成分指标差异,探讨大米外观和有机成分指标对大米产地鉴别的可行性。通过测定2013年查哈阳大米、建三江大米和五常大米89份样品的米粒投影面积、米粒长、米粒宽、长宽比、垩白度、垩白粒率、蛋白质含量和支链淀粉含量,并对数据进行方差分析。结果表明,地域和品种对大米的外观和有机成分指标均存在不同程度显著影响。The appearance index and physicochemical index differences of rice from different regions were analyzed, and the validity of indicators for rice origin discrimination was assessed, which was to explore the feasibility of appearance index and organic index fingerprinting to distinguish the geographical origin of rice. The grain area,grain length,grain width,length-width ratio,chalkiness, chalky rice rate,amylose content and protein content were determined in ninety samples from Chahayang farm,Wuchang county and Jansanjiang area from Heilongjiang province,and the variance analysis were applied in data analysis. The appearance quality and chemical properties had the significant effect on regions and varieties of rice.
