摘  要:为探寻信阳毛尖茶不同产区茶鲜叶品质的差异,对信阳毛尖茶5个产区(浉河区、平桥区、光山县、罗山县和新县)的2批春茶和1批夏茶鲜叶中主要品质成分进行测定和分析。结果表明,5个茶区的3批次茶鲜叶中氨基酸总量、儿茶素和酯型儿茶素的含量均以浉河区最高;茶氨酸含量最高的为浉河区的第1批春茶和夏茶,罗山县的第2批春茶。5个茶区间,3批次茶鲜叶中茶多酚、水浸出物、茶多糖和非酯型儿茶素的平均含量差异不显著,而咖啡碱、氨基酸、茶氨酸、儿茶素和酯型儿茶素的平均含量存在显著或极显著差异。5个茶区的春茶与夏茶鲜叶中咖啡碱、儿茶素的含量差异不显著,而茶多酚、茶多糖、氨基酸、茶氨酸、酯型儿茶素和非酯型儿茶素的含量存在显著或极显著差异。In order to analyze quality variations of fresh tea leaves from different tea producing areas in Xinyang,quality components of two batches of spring tea and a batch of summer tea of Xinyang Maojian tea fresh tea leaves which were taken from the five producing areas( Shihe area,Pingqiao area,Guangshan county,Luoshan county,Xinxian county) were measured and analyzed. The results showed that the contents of total amino acids,catechins and ester type catechins of the three batches of fresh tea leaves were the highest at Shihe,and the content of theanine of the first spring tea and summer tea fresh tea leaves was the highest at Shihe,while the content of theanine of the second spring tea fresh tea leaves was the highest at Luoshan. Among the five producing areas,the average contents of polyphenols,water extracts,tea polysaccharide and non-ester type catechins in three batches of fresh tea leaves showed no significant difference,and the contents of caffeine,amino acids,theanine,catechin and ester type catechins had significant or extremely significant difference. The comparison of quality of fresh tea leaves between the spring tea and summer tea from the five producing areas showed that the contents of caffeine and catechins had no significant difference,and the contents of polyphenols,tea polysaccharide,total amino acids,theanine,ester type catechins and non-ester type catechins had significant difference or extremely significant difference.
