摘 要:为合理利用赤霉病小麦,探究其特性及与真菌感染程度之间的相关关系,利用风选筛选将赤霉病小麦分级,研究分级后样品的籽粒特性、品质特性及呕吐毒素(Deoxynivalenol,DON)和玉米赤霉烯酮(Zearalenone,ZEN)含量。结果显示:分级对籽粒的重新分布效果显著。分级后随DON、ZEN含量的增加,样品籽粒特性和品质特性、流变学特性总体呈变差趋势。其中,千粒重、容重与真菌毒素含量显著负相关,不完善粒与真菌毒素含量显著正相关;白度、色度L*值与DON、ZEN含量均呈显著负相关关系,灰分、麸星面积与ZEN含量极显著正相关;形成时间、稳定时间、粉质质量指数、相应黏度、回生值等流变学特性指标与DON含量显著负相关。小麦感染赤霉病后,品质变差,且劣变程度与DON、ZEN含量存在一定相关性。The present study was to investigate the correlation between the properties of scabby wheat and mycotoxin infection level. The scabby wheat was classified by winnowing, after that Kernel characteristics, quality characteristics and DON (Deoxynivalenol) and ZEN (Zearalenone) contents of the classified samples were studied. The results showed that the influence of classification for the redistribution of kernel was significant. Kernel characteristics,quality characteristics and rheological properties of the samples after classification showed a overall deterioration with DON and ZEN contents increasing. Among them, thousand grain weight and bulk density were significantly negative correlation while unsound kernel were significantly positive correlation with mycotoxin contents; whiteness,chroma L* value and DON,ZEN contents showed a significantly negative correlation, while the ash content and bran star area were significantly positive correlation with ZEN content; development time, stability time, FQN (Farinograph quality number), corresponding viscosity, setback and other rheological properties index showed significantly negative correlation with DON content. It was indicated that the quality of the wheat became worse after infected by scab, and the degree of deterioration had a certain correlation with DON and ZEN contents.
