摘  要:比较了新疆种植的札一和马可波罗2种啤酒花废弃枝叶的主要营养成分、矿物元素含量及乙醇提取物的抗氧化活性。结果表明,2种啤酒花废弃枝叶中总蛋白质、粗脂肪、总多糖、总黄酮、总多酚以及微量元素的含量差异明显,除总蛋白外,马可波罗品种的其他营养成分含量均明显高于札一,两者的矿物元素含量中以Fe含量最高,Sr次之。以羟基自由基清除能力和DPPH自由基清除能力为考核指标,考察了2个品种啤酒花废弃枝叶70%乙醇提取物的抗氧化活性,结果表明,在两种抗氧化体系中提取物均表现出一定的抗氧化活性,其中,DPPH自由基的清除能力要高于羟基自由基的清除能力,但均低于对照品合成抗氧化剂BHT。The main nutritional components, mineral elements content, and the antioxidant activity of ethanol extracts of the abandoned branches and leaves of two kinds of hops including Marco Polo and SA-1 planted in Xinjiang were compared. The results suggested that, there were significant difference in the content of total proteins, fats, polysaccharides, flavonoids, polyphenols and trace elements between Marco Polo and SA-1(their content in Marco Polo evidently higher than that in SA-1 except total proteins), and Fe content was the highest in trace elements in both Marco Polo and SA-1(Sr content comes second). The scavenging capability of hydroxyl free radicals and DPPH free radicals were used as the evaluating indexes to evaluate the antioxidant activity of 70 % ethanol extracts of both the two hop species. The results suggested that,ethanol extracts of both the two hop species exhibited certain antioxidant activities, and DPPH radicals scavenging capability was stronger than hydroxyl free radicals scavenging capability, however, their antioxidant activities were still lower than BHT.
