摘 要:目的 掌握四川省达州市市售食品中蜡样芽胞杆菌污染状况。方法 2012-2014年在全市监测网点抽检熟制米面制品、婴幼儿配方米粉、巴氏消毒乳、奶粉4类食品,开展蜡样芽胞杆菌的定性定量监测。采样及检验依据GB4789-2010《食品安全国家标准食品微生物检验》。结果 4类食品中蜡样芽胞杆菌总体检出率为18.05%,其中熟制米面制品8.15%、婴幼儿配方米粉29.11%、巴氏消毒乳26.92%、奶粉32.65%。检出蜡样芽胞杆菌其定量计数结果范围为3.0~93 MPN/g之间。结论 2012-2014年达州市市售食品中存在一定的蜡样芽胞杆菌污染,提示食品在生产、加工及销售过程中应采取有效的卫生措施,防止污染,提高食品安全性。Objective To master the contamination status bacillus cereus in the marketing foods in Dazhou, Si- chuan province. Methods In 2012 -2014, four types of marketing foods were selected in at the monitoring network, namely cooked rice and flour products, baby formula rice flour, pasteurization milk and milk pow- der. The bacillus cereus was quantitatively tested. Sampling and test were conducted according to National food safety standard: food microorganism test (GB4789 -2010). Results The overall detection rate of bacil- lus cereus was 18.05% in the four types of foods, with the rate 8.15% in cooked rice and flour products, 29. 11% in the baby formula rice flour, 26.92% in pasteurization milk and 32.65% in milk powder. The quantitative counting of the bacillus cereus ranged from 3.0 to 93MPN/g. Conclusion In 2012 -2014, con- tamination of bacillus cereus exists in the marketing foods. Therefore, effective sanitary measures need to be taken in the producing, processing and marketing process to prevent the population and improve the food safety.
