摘  要:食品专业人才培养应主要面向轻工食品支柱产业,打破传统的人才培养模式,培养应用型、复合型、技能型食品专业专门人才。本文探讨了高校食品专业传统培养模式存在的问题,明确新培养模式的必然性和趋势,着眼于开辟企业需求通道、与重点支柱企业构筑产学研战略联盟、实践课程开发、实践基地的建设和双师结构教师队伍建设等五个方面提出具体策略,旨在有效推动高校食品专业工程技能型人才培养的实施。Professional talents in food specialty should be faced to leading enterprises of food and break the traditional training mode to develop compound food professional talents with application- oriented and skilled ability.Problems of traditional training mode in the process of brain training in university were discussed and the inevitability and tendency were clarified. Based on the program,concrete proposals and strategies were put forward from five important aspects such as opening corporate demand channel,constructing the strategic alliance to leading enterprises,developing practical courses,building practice base and constructing teacher team with double structures,aimed at effectively promoting implementation of talent training with engineering and skill in food specialty of university.
