摘 要:目的了解沈阳市与厦门市老年人膳食花色苷的摄入量及主要来源,分析南北方存在的差异,为老年人的饮食健康指导提供科学依据,并为后续探索花色苷摄入水平是否与北方心脑血管疾病高发有关奠定基础。方法采用称重记账法对沈阳市100名和厦门市60名60岁以上老年志愿者进行连续3天膳食调查,调查结果采用SPSS 16.0进行分析。结果沈阳市2000、2005、2012年春季老年人膳食花色苷摄入量比较,差异有统计学意义(F=12.65,P<0.01);组间用SNK法进行两两比较,2000与2005年和2012年比较,差异均有统计学意义(P<0.05);2005年与2012年比较,差异无统计学意义。2005年春秋两季摄入量的差异有统计学意义(t=3.842,P<0.05)。厦门市2012年春秋两季老年人膳食花色苷摄入量分别为(38.3±6.5)和(38.7±6.4)mg/d,经比较,差异无统计学意义(t=0.362,P>0.05);2012年春季厦门市与沈阳市老年人膳食花色苷摄入量比较,差异有统计学意义(t=37.178,P<0.01)。结论我国老年人膳食花色苷的摄入量存在一定的南北方地区上的差异,北方远远低于南方;而且北方存在明显的季节性,南方基本无季节性差异。[Objective] To understand the dietary intake and main sources of anthocyanins among elderly people in Shenyang City and Xiamen City,analyze the difference between North and South elderly people,provide a scientific basis for guiding the healthy diet among the elderly,and lay a foundation for the subsequent research about the relationship between intake level of anthocyanins and the high incidence of cerebrovascular disease in North.[Methods] Volunteers over 60 years old,including 100 in Shenyang City and 60 in Xiamen City,were investigated by the accounting weighing method for three consecutive days. The survey results were analyzed by using SPSS 16.0 software.[Results] In Shenyang elderly people,there were statistically significant differences in intake level of anthocyanins in spring among the years of 2000,2005 and 2012(F =12.65,P〈 0.01).The SNK analysis showed that the differences between 2000 and 2005,2000 and 2012 were statistically significant(P 〈0.05),while the difference between 2005 and 2012 was not statistically significant. In 2005,there was statistically significant difference in intake level of anthocyanins between spring and autumn(t=3.842,P〈0.05). In Xiamen elderly people,the intake levels of anthocyanins in spring and autumn were higher relatively,which was(38.3±6.5) mg/d and(38.7±6.4) mg/d respectively,and the difference was not statistically significant(t=0.362,P〉0.05). In spring of 2012,the difference of intake level of anthocyanins among Xiamen and Shenyang elderly people was statistically significant(t=37.178,P〈0.01).[Conclusion] The intake level of anthocyanins among elderly people in northern China is much lower than that in southern China,which the difference is significant.Meanwhile,the there is obvious seasonal variation in northern elderly people,but it has not been observed among southern elderly people.
