摘  要:目的了解四川省遂宁市市售食品中食源性致病菌的污染情况,为食源性疾病的有效预防和控制提供科学依据。方法按照国家标准方法,全市随机抽取各类食品,开展金黄色葡萄球菌等7项食源性致病菌监测。结果 2013-2014年共抽检食品样品370份,74份样品中检出78株致病菌,总检出率21.08%,其中蜡样芽胞杆菌和金黄色葡萄球菌检出率最高,分别为8.92%、4.59%。检出食源性致病菌的食品包括桶装饮用水(43.75%)、乳与乳制品(43.33%)、婴幼儿食品(28.00%)、肉与肉制品(27.27%)、餐饮食品(26.09%)、水产品(7.41%)。结论 2013-2014年遂宁市部分市售食品存在不同程度食源性致病菌污染,加强食品卫生监督,有针对性的控制各类食品中致病菌的污染,是防止食源性疾病的重要措施。Objective To better understand the contamination status of food-borne pathogens in various foods sold in Suining market and to identify the high-risk food,so as to provide the scientific basis for effective prevention of food borne diseases. Methods According to the method of national standard,all kinds of foods in the city were rando mly selected so as to monitor seven categories of foodborne pathogens,such as Staphylococcus aureus,etc. Results In 2013-2014,370 food sa mples were tested,74 samples were positive in terms of 78 pathogenic bacteria with an overall positive rate of 21. 08%. The food with positive foodborne pathogen included pailed drinking water( 43. 75%),milk and dairy products( 43. 33%),infant food( 28. 00%),meat and meat products( 27. 27%),catering food( 26. 09%) and aquatic products( 7. 41%). Conclusion Foodborne pathogens pollution exists in Suining during 2013- 2014. Govern ments need to take targeted measures to improve the food safety.
