摘  要:目的了解油条、油饼中铝污染状况,探讨铝污染食品的影响因素。方法采用国家推荐的检验方法,对2012—2015年濮阳市油条、油饼中铝残留量进行检测,并用SPSS13.0软件对测定结果进行分析,以国家标准GB2760—2011判定是否超标。结果2012—2015年共检测270份,铝检出范围0.002—1196.2mg/kg,均值137.1mg/kg,铝超标率达43.3%;油条中铝均值212mg/kg,超标率为51.1%;油饼中铝均值89.7mg/kg,超标率27.3%;农贸市场和街头摊点油炸制品铝含量明显高于餐饮店,差异有统计学意义(X2=13.523,P=0.001)。结论油炸面制品中铝残留量超标严重,特别是油条,其污染与滥用含铝膨松剂有关;应加强集贸市场和街头摊点食品管理。Objective To investigate the aluminum pollution situation of twisted cruller and seedcake and explore the impact factors of aluminum contamination of food. Methods Using the test method recommended by the country, the aluminum residue was detected in deep-fried dough sticks and fried cakes in Puyang city during 2012-2015, and the determination results were analyzed by SPSS13.0 software and determined whether exceed the standard based on the national standard GB2760-2011. Results 270 parts were detected in 2012-2015. Aluminum detection range was 0.002~1196.2 mg&g, the mean value was 137.1 mg/kg and the aluminum exceeded rate was 43.3 %. The mean alu- minum value in fritters was 212 mgkg, and the exceeding rate was 51.1%. The mean aluminum value in cake was 89,7 mg/kg, and the exceeding rate was 27.3 %. The aluminum contents of fried products in farmers ' markets and street stalls were much higher than beverage outlets, the differences was statistically significant (X2=13.523 ,P=0.001 ). Conclusions The residues of aluminum in fried pasta were exceeded seriously, especially fritters. It should strengthened in the management of bazaars and street food stalls.
