摘　　要：人们对功能食品需求的日趋旺盛反映了当代人类对食药同源的营养干预理念的回归;但同时,功能食品的安全性也日益引发关注,其中外源性违禁添加和内源性功效成分不明是普遍存在的突出问题.如何从复杂食品体系中探明和鉴别各类滥用活性成分是保障功能食品安全的关键手段.本文就近年来功能食品的违禁添加特点、检测方法现状与挑战、技术发展趋势特别是"非目标"质谱筛查策略进行了系统评述.In recent years, there has been an increasing need for dietary supplements, which reflects contemporary people＇s growing attention to nutritional therapy based on the homology of medicine and food. However, dietary supplements have aroused wide concern due to the illegal adulteration with undeclared synthetic chemicals and the indeterminacy of the endogenous components in healthy foods. The detection, discovery and identification of multi-class illegal adulterants and bioactive ingredients in the complex food matricies is of fundamental importance for guaranteeing food safety and quality. This review summarized the current situation of illegal adulteration, technical challenges, detection tools, particularly mass spectrometry-based untargeted screening strategies.
