摘 要:以中药原酒为原料,根据Box-Behnkend试验设计原理,采用响应面分析法,建立壳聚糖澄清药酒的二次多项数学模型,并以药酒澄清度为响应值和等高线建立响应面,研究壳聚糖浓度、处理温度、处理时间对药酒澄清效果的影响。结果表明:壳聚糖澄清药酒的最佳工艺条件为澄清剂添加剂量8.0g/L、处理温度32.6℃、处理时间46.4min;与常规法澄清药酒相比,经过处理的药酒澄清度提高了13.4%。Medicinal liquor was used as the material to explore the effect of chitosan on the clarification of Medicinal liquor through response surface methodology according to the Box-Behnken design principle. A second order quadratic mathematic model was established for the clarification of medicinal liquor. There response values and contour plots were established by the clarity of medicinal liquor to investigate the effects of chitosan dosage, treatment temperature and treatment time on clarification efficiency of medicinal liquor. The optimal processing conditions were chitosan dosage of 8.0g/L, treating temperature of 32.6℃ and treatment time of 46.4 min. Compared with traditional clarification method, the clarity of medicinal liquor was enhanced by 13.4%.
