摘 要:货架期是食品质量评价的重要指标,准确地识别食品货架期能为食品贮藏保鲜提供科学指导。仿生电子鼻技术作为一种模拟生物嗅觉的新颖检测手段,相对其他识别方法在食品货架期识别上更具优势。介绍仿生电子鼻的发展历史、工作机理、传感器以及模式识别方法,围绕仿生电子鼻在果蔬类食品、肉类食品、蛋奶类食品、谷类食品和油类食品上的应用进行综述与分析。总结仿生电子鼻技术尚存在的问题,并提出相应的解决方案,以供深入研究参考。Shelf-life is an important index for food quality evaluation.It is significant that recognizing food shelf-life precisely can provide scientific reference for food sales and circulation,which has not been solved yet.As a new detection method which imitates biological olfactory,bionic electronic nose technology provides a new mean for food shelf-life recognition.This paper introduced develop history,operate principle,sensors and main pattern recognition methods of electronic nose,and stated the application of electronic nose on fruits and vegetables,meats,eggs and dairy,grains,oils.Some suggestions for next research direction also been proposed that improve the accuracy of food shelf-life recognition model by perfecting the pattern recognition algorithms,use small amount of special sensors to explore specific electronic nose for some kind of food and lower the detection cost,develop food shelf-life recognition model in dynamic shelf condition of actual food transportation and storage process.
