蓝莓山药复合饮料的研制

摘　　要：以蓝莓和山药为主要原料,白砂糖、柠檬酸等为辅料制备复合饮料,并加入适量的稳定剂。通过单因素试验和正交试验得出,蓝莓山药复合饮料的最佳配方组合为山药汁30%,蓝莓汁25%,白砂糖9%,柠檬酸0.18%,CMC-Na 0.20%。A composite beverage is developed with blueberry and Chinese yam as main raw materials,sugar and citric acid as accessories,add the right amount of stabilizer. By single factor test and orthogonal experiment design,the optimal formula of the sanitarian beverage of blueberry and Chinese yam is as follows： the amount of Chinese yam is 30%, the amount of blueberry is 25%,the amount of sugar is 9%,the citric acid is 0.18% and the CMC- Na is 0.20%.
