摘  要:以鲜切苹果为材料,分别用护色保鲜液(a组)、1.5%再生丝素蛋白液(b组)、护色保鲜液+1.5%再生丝素蛋白液(c组)和1.5%壳聚糖溶液(d组)进行保鲜处理,研究再生丝素蛋白作为鲜切苹果贮藏涂膜保鲜剂的保鲜效果。结果表明,在相同的低温(4℃)贮藏期内,与对照组(不做保鲜处理)相比,4组处理方法的保鲜效果依次为c组、b组、a组、d组。经护色保鲜液+1.5%再生丝素蛋白液涂膜混合处理能有效保持鲜切苹果的良好品质,其失重率降低,褐变度减少,多酚氧化酶(PPO)活性先升高后下降,菌落总数显著下降(P<0.05),使感官评分、脆度、维生素C含量均能维持较好水平。根据试验结果分析认为,丝素蛋白在鲜切苹果表面形成的保护膜可减缓鲜切苹果的呼吸作用和果肉组织的衰老速度,抑制微生物的增长,从而有效地保持了鲜切苹果在贮藏期间的品质。In this paper,fresh-cut apples were treated with color preservative solution( group a),1. 5%( mass fraction)regenerated silk fibroin solution( group b),mixed solution of color preservative solution and 1. 5% regenerated silk fibroin solution( group c),and 1. 5% chitosan solution( group d) to study the fresh-keeping effect of regenerated silk fibroin as coating agent for fresh-keeping of fresh-cut apples. The results indicate that,during the same storage periods under low temperature( 4 ℃),the preservation effect was in the order of group c,group b,group a and group d compared to the control( without fresh-keeping treatment). The fresh-cut apple slices could keep the quality more effectively after treatment with mixed solution of 1. 5% regenerated silk fibroin solution with color preservative solution. The rate of weight loss,degree of browning,and total number of bacteria of the preserved apple slices were all significantly decreased( P〈 0. 05). The activity of polyphenol oxidase( PPO) increased at first and then decreased. The sensory evaluation,hardness,and vitamin C content of the preserved fresh-cut apple slices were kept in high level. The above results suggest that protective film formed on the surface of fresh-cut apple could slow the respiration and senescence speed,inhibit the growth of microorganisms,so as to maintain the quality of fresh-cut apples during storage period.
