摘　　要：鲜切水果具有较大的市场前景,综述了鲜切水果品质控制的研究进展,介绍了水果加工与保鲜技术的研究进展,分析不同保鲜方法的利弊,对其发展趋势和商业前景进行了展望。Fresh-cut fruit has a large market prospects. The research progress of fresh-cut fruit quality control is summarized and the fruit processing and the research progress of fresh-keeping technology are also introduced. Besides, the pros and cons of different preservation methods are particularly analyzed. At last there is a positive outlook of its development trends and business foreground.
