摘 要:为了充分利用藏羊血液资源,试验采用抗凝、过滤、喷雾干燥等工艺制得血粉,通过酶解过活性炭进行藏羊血多肽的制备,测定藏羊血液多肽制备工艺的优化工艺参数。结果表明:优化后的工艺参数为粉末活性炭用量2.0%、p H值5.0、温度50℃、时间2.0 h。各因素对酶解液脱色率影响大小为粉末活性炭用量>p H值>温度>时间;对酶解液多肽损失率影响大小为粉末活性炭用量>p H值>时间>温度。在该最佳工艺条件下藏羊血粉酶解液多肽损失率相对平稳,制得的藏羊血液多肽为浅黄色、无异味、小颗粒的粉末状态。To take full advantage of the blood resources of Tibetan sheep, the blood meal was obtained using antieoagulation, filtration, spray - drying, and other technologies in the test. The preparation technology of polypeptides from blood of Tibetan sheep was carried out by enzymatic hydrolysis and activated carbon, and then optimal process parameters of the preparation technology were determined. The results showed that the optimized process parameters were determined as follows : the powdered activated carbon dosage of 2.0%, pH value of 5.0, temperature of 50 ℃, time of 2.0 h. The effects of various factors on the decoloration rate of enzymatic hydrolysate in descending order were as follows: the powdered activated carbon dosage, pH value, temperature, and time. The effects of various factors on the loss rate of polypeptides of enzymatic hy- drolysate in descending order were as follows: the powdered activated carbon dosage, pH value, time, and temperature. The results indicate that the loss rate of polypeptides of enzymatic hydrolysate in blood meal of Tibetan sheep is relatively stable under the optimum process condi- tions, and the obtained polypeptide powder of blood from Tibetan sheep is yellow, no odor, and small particles in powder state.
