摘  要:在不同皂土浓度、温度、时间和p H下,研究皂土对黄秋葵汁的澄清效果。在单因素试验基础上,应用响应面分析优化皂土对黄秋葵汁的澄清条件。结果表明,皂土对黄秋葵汁的最佳澄清条件为皂土添加量0.31 mg/m L、作用时间84 min、温度75℃、p H 2.10,此条件下得到秋葵汁透光率为97.6%。The clarification effect of okra juice with bentonite was studied under different bentonite addition, temperature, time and pH. On the basis of single factor experiment, the optimum clarification condition of okra juice with bentonite was determined through response surface analysis. The results showed that the optimum conditions of bentonite on okra juice were as follows: the bentonite addition was 0.31 mg/mL, the time was 84 min, the temperature was 75 ℃ and pH was 2.10. Under this condition, the transmittance of okra juice was 97.6% .
