摘　　要：介绍了内蒙古地区以牛乳为主的两类传统乳制品工艺技术,并对加工过程及产品进行了分析与检测,旨为进一步深入研究传统乳品及工业化生产提供了借鉴。We introduced the processing technology of two kinds of Inner Mongolian traditional dairy products, analyzed and tested the pro- cessing methods and final products, provided reference for further studying of traditional dairy products and its industrial production.
