摘 要:高等学校餐饮工作的管理水平和服务质量直接关系到学校的发展和稳定.结合对云南省某高校餐饮工作发展状况的分析可知,目前我国高等学校餐饮工作管理水平不高,原材料采购不规范,食堂卫生状况堪忧,员工素质普遍偏低,缺乏经营透明度,餐饮工作规范性不够,缺少有效的管理方法.要提高高等学校餐饮工作的管理水平,需积极创新餐饮工作方法,通过推进现场管理精细化,构建以安全防控、价格定价、质量监督、服务保障为主要内容的阳光食堂体系,形成系统、规范、标准化的高等学校餐饮管理体系,设定衡量指标和量化考核,发现并解决问题,不断提升阳光食堂体系的运行效率和效果.The canteen and restaurant management level and service quality are directly related to the development and stability of universities. The analysis of a university in Yunnan province shows that now the management level of canteen and restaurant among the universities in China is not high enough,mainly due to lack of standardization in the raw material purchase,worrying canteen hygiene,generally low quality of employees,short of operation transparency,non- standard catering work,and absence of effective management strategies. In order to build a systematic and standardized system of catering management system in campus,improvement should be carried out in the management level,positive innovation catering work method,refined management,and the sunshine canteen system of security,pricing,quality supervision,and service protection should be built. Measures and quantitative assessment should be set to identify and solve problems as well as to improve the sunshine canteen system operation efficiency and effect.
