摘  要:研究了(10±5)k Pa、(80±)5 k Pa两个减压压力处理及常规冷藏对水蜜桃贮藏期间褐变指数、呼吸途经、活性氧和相关酶活性变化的影响。结果表明,减压处理可有效减少果肉丙二醛的含量,减轻膜脂过氧化,减缓果肉褐变的发生。减压处理果实中的超氧阴离子产生速率低于对照,而H2O2含量在减压贮藏中保持稳定。减压处理的交替氧化呼吸途径在贮藏中后期得到增强,并有效保持APX、POD酶活性,说明减压处理在减少活性氧生成的同时,有利于活性氧的清除。采用(10±5)k Pa压力处理更有利于维持采后贮藏的活性氧代谢能力。结论:减压在采后保鲜上的作用与活性氧代谢相关。The effect of hypobaric storage under different pressures on the respiration pathway and active oxygen metabolism of juicy peach fruit were studied. The pressures were controlled at(10±5) k Pa and(80±5) k Pa, respectively with air storage as control. Internal brown index and contents of MDA, O2^-·, H2O2 and respiration pathway, and the activities of active oxygen metabolism-related enzyme APX, POD were determined during storage. The results indicated that the contribution of the alternate oxidation pathway to the total respiration was increased in the hypobaric storage. Hypobaric storage could maintain higher APX activities, reduced the accumulation of active oxygen species, maintained the stability of membrane system, and retarded occurrence of internal brown. It is concluded that the hypobaric storage is an effective method of prolonging the postharvest life of juicy peach fruit and the benefits of hypobaric storage associated with active oxygen metabolism. Hypobaric storage under(10 ±5) k Pa pressure is more conducive to maintain storage quality.
