摘  要:目的了解泰安市婴幼儿食品中常见致病菌污染及耐药状况,为婴幼儿食品安全管理及食源性疾病预警和临床用药提供科学依据。方法依据GB 4789—2010及GB/T 4789—2003检测程序,对泰安市婴幼儿食品进行蜡样芽胞杆菌、阪崎肠杆菌、金黄色葡萄球菌的分离、鉴定及药敏测试,并对阪崎肠杆菌进行毒力基因检测。结果共检测样品260份,检出41株致病菌,总检出率为15.8%。3种致病菌检出率以蜡样芽胞杆菌最高(11.9%),金黄色葡萄球菌最低(1.2%),差异有统计学意义(χ2=35.423,P<0.01)。阪崎肠杆菌均对头孢西丁100%耐药,金黄色葡萄球菌对红霉素耐药率为100%,而万古霉素、环丙沙星及苯唑西林均敏感,蜡样芽胞杆菌对万古霉素、环丙沙星及甲氧苄啶100%敏感。7株阪崎肠杆菌hly毒力基因检测全部阳性。结论泰安市婴幼儿食品存在严重的食源性致病菌污染,对婴幼儿的健康构成严重的潜在危害。相关部门应加强监管,确保食品生产安全。临床合理用药以避免耐药菌株产生。Objective To investigate the contamination and drug resistance status of common pathogenic bacteria in infant food in Tai'an,so as to provide scientific basis for food safety management and food borne diseases in infant foods. Methods In species of infant food,isolation,identification and drug sensitivity test were conducted for Bacillus cereus,Enterobacter sakazakii and Staphylococcus aureus according to the national standard GB 4789—2010 and GB / T 4789—2003. And the virulence gene of E. sakazakii was also detected. Results The total 41 strains pathogenic bacteria were detected in 260 samples,and the total detection rate was 15. 8%. The detection rate of Bacillus cereus was the highest( 11. 9%) and the Staphylococcus aureus was the lowest( 1. 2%) of three kinds of pathogenic bacteria,there was statistical significance on the difference in detection rates( χ^2=35. 423,P〈0. 001). And resistant rate of E. sakazakii to cefoxitin was 100%. The resistant rate of Staphylococcus aureus to erythromycin was 100%,while that of vancomycin,ciprofloxacin and benzene westwood were sensitive; the sensation of Bacillus cereus to vancomycin,ciprofloxacin and trimethoprim was 100%. The detection rate of hly gene was 100%. The virulence genes of 7 strains of Enterobacter sakazakiihly were all positive. Conclusion There are serious food borne pathogenic bacteria pollution in infant food from Tai'an,which caused serious potential hazards to the health of infants and young children. The relevant departments should strengthen supervision to ensure food safety. Clinical rational use of drugs should be done in order to avoid the production of drug resistant strains.
