摘  要:综述了硒与人体健康的关系,分析了稻米籽粒硒营养的特点。试验研究了加工过程对富硒留胚米硒含量的影响。结果表明,采用富硒籼稻糙米加工富硒留胚米,加工精度达国标(GB 1354—2009)四级、三级时,留胚率分别达95%、83%,硒含量为糙米硒含量的97.0%、94.0%;采用富硒粳稻糙米加工富硒留胚米,加工精度达国标(GB 1354—2009)四级、三级时,留胚率分别达90%、81%,硒含量为糙米硒含量的98.3%、95.3%。We summarized the relationship between selenium and human health, and analyzed rice selenium nutrition charac- teristics. The effects of processing on selenium content of Se enriched rice with remained germ were studied. The results showed that for rich selenium Indica rice with remained germ, according to GB 1354--2009,when the mill degree reached level four or level three, the embryo rate were 95 % and 83 %,respectively, and the selenium content were 97 % and 94% as that of brown rice; for rich selenium Japonica rice with remained germ, according to GB 1354--2009, when the mill degree reached level four or level three, the embryo rate were 90%%o and 81~//00, respectively, and the selenium content were 98.3% and 95.3% as that of brown rice.
